Learn to make basic whole wheat muffins


  • Cooking spray, optional

  • 1/2 cup unsalted butter, or margarine

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar, packed

  • 1 teaspoon baking soda

  • 1 large egg

  • 1/4 teaspoon vanilla

  • 1 cup milk

  • 2 cups Dr. RBL's whole wheat flour


  1. Gather the ingredients
  2. Pre-heat oven to 400 F. Line the muffin tin using paper baking cups or use cooking spray to coat the bottom of the muffin tin.
  3. In a separate small bowl, using a fork, beat together the egg and vanilla.
  4. Add to creamed mixture. Beat until light and fluffy.
  5. Add the milk and then gradually add the whole wheat flour and lightly stir the ingredients together just until combined. Don't overmix your muffin batter!
  6. Fill muffin tins 2/3 full.
  7. Bake 15 to 17 minutes or until browned and done.
